The Olivier family started Viña Mayu in 2005 in northern Chile's Elqui Valley. They chose the name "Mayu," the Inca word for the Milky Way's "river of stars" in acknowlegement of the Elqui Valley's very clear atmosphere, which has made it a valuable place for astronomy researchers. The valley is one of Chile's up-and-coming wine regions and is known for growing syrah, carmenere and pedro ximénez.
This is a unique expression of pedro ximénez, the grape most often used to create sweet sherry. This wine is has a lovely light acidity and chalky minerality. Light, bright and refreshing with fruity and floral aromas.
